Egg White Crepes

The entire batter is less than a dollar to make. Enjoy this healthy dish with more than 13 grams of protein and only 125 calories!

Egg White Crepes

Inspired by Crepini's Egg White Thins! Only 20 calories and 2 grams of protein each crepe. These crepes are very universal. Make them sweet with berries and Greek yogurt or savory with lunch meat and mustard.
Makes 6 crepes in an 8" skillet.

Ingredients
  

  • 100 gram Eggwhites
  • 15 gram All Purpose Flour
  • 10 gram Unsweetened Applesauce
  • 60 ml Unsweetened Vanilla Almond Milk
  • 0.25 teaspoon Xanthan Gum
  • 1 gram Canola oil, spray

Instructions
 

  • Whisk together the egg whites, applesauce, flour, milk, and xanthan gum until smooth.  If you do not have xanthan gum you can omit this, it just helps to combine the ingredients.
  • Spray a skillet with non-stick cooking spray and set over low heat. I use an 8" skillet.
  • Pour a 1/4th cup of the batter into the skillet and spread the batter out with a tilting motion.
  • Cook until the crepe starts to form bubbles on the top and is solid. Flip and cook for another 2 minutes.  

Notes

Serve with Greek yogurt mixed with vanilla extract and berries. Or make it savory by using lunch meat, salad, and mustard.
To store, let crepes cool and place them in an airtight container or in a zip lock bag in the fridge for 3-4 days. For best consistency place paper towels or parchment paper between each crepe. Can be frozen but thaw in the fridge.
