Cake Batter Ice Cream – Milk Only Base
Feel free to use one type of milk. I combine almond milk and skim milk to make it less calories without sacrificing the consistency and taste.
Equipment
- 1 Icecream Machine Ninja CREAMi preferably
Ingredients
- 60 ml/gram Unsweetened – Almond Milk
- 240 ml/gram Skim Milk 0%
- 1 tsp McCormick – Cake batter extract
- 0.5 tsp Xanthan Gum or Guar Gum Optional but helps create a creamy consistency
Instructions
- In a blender, food processor, or immersion blender: combine all ingredients except 20 grams/ml of the milk and blend until smooth.
- Transfer the mix to the container.
- Freeze for at least 24 hours.
- When ready, use the light ice cream setting on the Ninja CREAMi machine.
- After the cycle is done, take it out of the container and add the remaining 20 grams/ml of milk.
- Now use the respin setting on the Ninja CREAMi machine.
Notes
Top with sprinkles! Only an additional 8 calories for 2 grams.
Helpful tip: Some people find it becomes creamier if you let the mix sit out at room temperature for 10 minutes before using the machine.
