Vanilla Ice Cream – Cottage Cheese Base

Made for the Ninja Creami but may work in other ice cream machines too

Ingredients
  

  • 200 gram/ml Skim Milk Can use any other milk of your liking
  • 110 gram Low Fat Cottage Cheese
  • 1 tsp Vanilla Bean Paste
  • 0.25 tsp Xanthan Gum or Guar Gum can be omitted but it is very helpful for consistency
  • 10 gram sugar alternative Sweeten to taste, you may want more than 10 gram

Instructions
 

  • In a blender, food processor, or immersion blender: combine all ingredients except 20 grams/ml of the milk and blend until smooth.
  • Transfer the mix to the container.
  • Freeze for at least 24 hours.
  • When ready, use the light ice cream setting on the Ninja Creami machine.
  • After the cycle is done, take it out of the container and add the remaining 20 grams/ml of milk.
  • Now use the respin setting on the Ninja Creami machine.
  • Helpful tip: Some people find it becomes creamier if you let the mix sit out at room temperature for 10 minutes before using the machine.
