Zucchini and Mushroom Chicken Stir Fry

  • 450 gram chicken breast
  • 8 gram cornstratch
  • 2 clove garlic
  • 4 gram ginger root
  • 100 gram mushrooms
  • 360 gram zucchini

Sauce mix

  • 4 gram sesame oil
  • 2 gram sugar
  • 60 gram/ml soy sauce
  • 15 gram/ml rice vinegar


  • Chop zucchini and mushroom.
  • Grate the garlic and ginger.
  • Cut chicken into thin bite-size pieces and coat with cornstarch.
  • Make the sauce by combining soy sauce, sugar, sesame oil, and rice vinegar in a small bowl.
  • Heat a skillet over medium-high heat. Spray with non-stick spray and add the chicken. Cook until it is done, 3-5 minutes depending on the thickness of your chicken. Set aside.
  • Add mushroom into the skillet and saute for 3 minutes.
  • Add garlic and ginger and let cook for another minute.
  • Add zucchini, chicken, and sauce.
  • Cook until sauce thickens, about 2-3 minutes.
  • Serve over rice or cauliflower rice.


Sprinkle the dish with sesame seeds.
