Zucchini and Mushroom Chicken Stir Fry
Simple stir-fry from your favorite take-out place just got better
Ingredients
- 450 gram chicken breast
- 8 gram cornstratch
- 2 clove garlic
- 4 gram ginger root
- 100 gram mushrooms
- 360 gram zucchini
Sauce mix
- 4 gram sesame oil
- 2 gram sugar
- 60 gram/ml soy sauce
- 15 gram/ml rice vinegar
Instructions
- Chop zucchini and mushroom.
- Grate the garlic and ginger.
- Cut chicken into thin bite-size pieces and coat with cornstarch.
- Make the sauce by combining soy sauce, sugar, sesame oil, and rice vinegar in a small bowl.
- Heat a skillet over medium-high heat. Spray with non-stick spray and add the chicken. Cook until it is done, 3-5 minutes depending on the thickness of your chicken. Set aside.
- Add mushroom into the skillet and saute for 3 minutes.
- Add garlic and ginger and let cook for another minute.
- Add zucchini, chicken, and sauce.
- Cook until sauce thickens, about 2-3 minutes.
- Serve over rice or cauliflower rice.
