Chili with a twist – high protein and low calorie

  • Slow Cooker


  • 454 gram chicken Breast
  • 110 gram onion Yellow or White. About 1 medium sized.
  • 2 cloves garlic
  • 14 gram jalapeño Equals one pepper
  • 10 oz (1 can) diced tomatoes and chopped green chilies I use Rotel
  • 708 gram water with 12-gram Granulated Chicken Bouillon or 708-gram Chicken Stock Equals 3 cups Chicken Stock

Spice Mix

  • 0.5 tsp salt
  • 2 tsp ground Cumin
  • 1 tsp dried Oregano
  • 0.5 tsp ground Cayenne

End of cook time

  • 20 gram cilantro About 9 springs
  • 30 ml lime Juice Approx. 1 lime
  • 1 can cannellini beans or white kidney beans Drained and Rinsed


  • Chop onion, jalapeño, and mince garlic.
  • Add the main ingredients and the spice mix to a slow cooker.
  • Cover and let cook on low until the chicken is done, about 4-6 hours.
  • Towards the last 30 minutes, add the beans.
  • Chop the cilantro.
  • Before serving, shred the chicken breast.
  • Then stir in the lime juice and cilantro.
  • Serve topped with sliced scallion, cubed avocado, sour cream, radishes, cheese, or jalapeño slices (pickled).


For a more complex flavor, sauté the onions, garlic, and jalapeño before adding them to the slow cooker:
  1. Add butter to a pan over medium heat.
  2. Add onions, and cook for 8 minutes.
  3. Add the jalapeño and garlic, and cook for 1 minute.
  4. Add the spice mix, and cook for 1 minute.
  5. Transfer everything into the slow cooker along with the rest of the main ingredients.
  6. Follow the main recipe.
You can also add frozen corn in the last 10 minutes of the cooking time.
